Bok Choy, sometimes called Chinese cabbage, Chinese chard, Chinese mustard, celery mustard, or spoon cabbage, is a chinensis variety reminiscent of mustard greens. It’s a bright green, bitter, leafy vegetable often found in Asian dishes or sautéed with garlic as a side dish.
This is not my cup of tea personally, but I guess if you like Kale and garlic and bitter greens in general, it’s a beautiful vegetable and well worth the trouble.
