Pizza is one of life’s great treats, and once you get the hang of it, making homemade pizza dough is really pretty simple. We use a bread machine to knead the dough simply out of ease, but a stand mixer does the same job, and frankly, it’s not that hard to knead dough by hand if you don’t have a machine.

Recipe
(Makes four, small 10-12″ pizzas. We always make small pizzas, so we can try different toppings.)
- 3 cups “00” Flour (very fine flour you will probably need to order online or get from a speciality store)
- 1 cup Water
- 2 tsp Instant Yeast
- 1 tsp Kosher Salt
Toss everything into your mixer and let her rip. We like to add the water first, but it probably doesn’t matter. When the dough has formed into a ball, take it out and make your dough ball. See below.
Place your dough ball in a bowl lightly coated with olive oil and cover tightly with plastic wrap.
Let the dough rise for 2-3 hours at least, as much as 24 hours. The longer it goes (to a point), the more flavorful.
Once you are ready, roll out your dough and make your pizzas. We will cover the actual making of pizza in a different post.
A few things we’ve learned over the years:

- The flour make a difference. You can make dough with any type of flour but if you want a thin, chewy crust, you need a proper flour.
- Don’t add the oil that most recipes call for in the dough mix. But add a tbs of olive oil after you’ve made your dough ball to keep it moist as it rises.
- Learn to make a proper dough ball. Watch this video to learn how. It’s easy and will change your life.
- Don’t overwork your dough. Not when you’re kneading it, and not when you’re “rolling it out.”
